The more available seats there are on a plane, the more available beds there are in a hotel the cheaper the holiday is, as they want those seats and beds full. As the bookings start to come in and availability is reduced, the price starts to go up!

Last minute deals happen when some of theses seats or beds remain empty, close to the travel date. The holiday is then reduced to try and fill those final empty places.
The only problem with this scenario is that your holiday is based on what is available rather than the holiday you actually want.
